Chocolate Almond Date Truffles

Ingredients:
3/4 cup thin slivered almonds
10 large medjool dates, pitted
1/2 tsp almond extract
2 Tbsp pure maple syrup, agave nectar or honey
2 Tbsp unsweetened cocoa powder, divided

Instructions:
Place slivered almonds in a food processor and blend 30 seconds or until finely ground. Add dates, almond extract, maple syrup and 1 Tbsp cocoa powder. Blend until the mixture is smooth and sticks together. Divide into 12 equal portions and roll into small balls. Lightly roll in the remaining tablespoon of cocoa powder. Chill.

Original recipe makes 6 servings. (2 balls per serving)  208 Calories, 4g Protein, 7g (29%) Fat, 37g Carb, 5g Fiber, 31g Sugar, 0mg Sodium
